I would argue that Wurm is the most /out/ game that you can play at the moment. Its not massively pretty graphically speaking but it has the most in depth crafting system of any game i have played.
Its something of a precursor to the current "survival genre" that's sprung up. One of the members of the original dev team was notch, a good while back before he went on to make minecraft.
Its an mmo, its got a good big community that is unbelievably nice and my personal favorite bit of "back of the box" features, every single thing on the island that's man made was actually built by a player. Every island in the game starts fresh.
Its also still getting huge frequent updates, i think last month bridges were added which drastically changed the game.
