I had spaghetti squash come out of my compost and grow like a monster last year and I just put the squash on a table in my house and they've been fine all year. I also made a little diy root cellar by burying a five gallon bucket. I put hopniss (wild tuber) in there last spring and forgot about them all summer. Just reopened the bucket last week to discover the year old hopniss tubers that looked perfectly fine to eat, no mold or nothing. I also harvested wild cranberries, left them in a bucket of water outside, totally fine for months. Similarly things like nuts store totally fine in their shell for years after you dry them. And by dry I don't mean put them in a food dehydrator, just let them sit single layer for a couple weeks, very simple and easy.
