The next big one is pole quality--good tents come with properly shock-corded aluminum poles, the cheapos come with loosely corded or uncorded fiberglass poles. The aluminum is more durable by a large margin, the ferrules are less likely to come loose, and having proper tension on the shock cord makes them easier to set up and less likely to tangle.
The next difference is gonna be, good tents have usable vestibules so you're not having to bring your nasty-assed boots inside or leaving them out in the weather. Some good tents will have enough room in the vestibule for 2-3 full-size (60-70L) frame packs.
Your cheapo car-camping tents are going to be a bit more robustly sewn, many will have bathtub-style tarp bottoms instead of low-denier nylon, thus they don't absolutely 100% require a footprint and/or you can get by with a walmart woven tarp. But they don't hold up to winds worth a shit, and the issue with the poles.
