Chicken livers work well, but I catch plenty of decent sized catfish on dough balls on a treble hook too. Also, if you can catch a bluegill and cut it into head/body/tail chunks, hook the corner and catch some nice catfish. Bigger catfish become more and more predatory. Shrimp works too.

When you thread your line through it and tie the hook directly on so that the weight can slide freely up and down the line all the way down to the hook, it's called a "knocker rig" or "bumper rig".
For catfish, I would suggest a "fishfinder" or "carolina" rig. Get yourself a pack of small barrel swivels do what

Or just fish them a foot+ under a bobber. I use the orange foam ones with a weighted bottom myself.
