We have lots of forests in N. America, far more than that in Europe, but it is true many major cities lack good natural stands where mycorrhizal edibles would be abundant.
It's more of a cultural thing. British colonies are typically mycophobic and, generally speaking, it doesn't seem the natives here extensively consumed mushrooms. Lots of Americans are of German descent though, so maybe something was lost due to urbanization.
