I usually wear a sweat-wicking undershirt with a flannel or a bunnyhug. I find that if I wear anything thinner than the flannel the wind will cut through.
Maybe something less close to my body (like a poncho) would be abetter choice?

Layered clothing. When it's hot, remove a layer or two. When it gets colder, put on a layer.

If you move, you need less clothes. This is just common sense.

Close to the body you want something transporting sweat to the next layer. The next layer is something insulating like a fleece. The layer after that is wind/rain proof. And so on.

If you're hot, then you want more air. If you're cold, you want less. Being completely protected from the wind and completely exposed to it are not the only two options. Clothing often comes with zippers or buttons which allow you to PARTIALLY insulate yourself. Crazy, I know.
