Finally in a position to be able to get and properly care for a dog.

looking to train it for hunting, preferable pheasant and waterfowl retrieval. i do plan on having kids in the next few years so that's a factor.

I've been thinking about a catahoula since i'm a louisiana native(state dog).

Just get a Lab. A well bred Lab 2 or 3 generations out from a FC, Hunt Test master or senior down to the sire (and dam, too) with all the health certs, from a good, reputable breeder. In Louisiana, it should be real easy to find a good one.
How do you want it plumbed and what color?
I suggest male, black. Males are most trainable and black is most plentiful.

I've run tests with poodles. I've trained with poodles. To a number, each has had dominance issues and would shut down under standard, normal, low level, light handed training pressure. Shit, you may as well get a Chessie. At least then you've got better than a snowball's chance in hell at getting working stock from proven lines.
The one person I've seen run a poodle with any success was a middle aged unmarried individual who accepted the breed's limitations as a sporting dog, and took it on as a challenge. That poodle had been trained for 2 years, would not allow itself to be forcefetched, and was having marginal finishes against Labs less than a year old. The trainer ran QAA Labs in the past.
If you want to gamble on a breeding of a meme tier dog that requires boutique level training methods so you can say "look at me, I got a poodle. Shut up Cletus, this dog can hunt." Knock yourself out.
O.P. is asking about getting his first dog, a family dog, to hunt ducks and pheasant. A poodle might be trained to do the work, but it's a high stakes gamble of an idiot with time to waste.

A few guys have brought catahoulas to NZ to use as pig dogs.

Im sure it would be possible to train one as a gundog as I have trained my Mastiff to retrieve shot rabbits but I wouldnt want to take him to a game bird shoot and ruin anybody elses day.

It took 2 years to train yard obedience and then to train an unnaturual retriever to retrieve. You could be hunting over a lab at 7 or 8 months.

I have a shih tzu. He's not an /out/ kinda dog but he's who I grew up with and now I take care of him.

He likes to go camping and just chills out in the dirt all day long. He wears his little orange vest and I just pack some dry dog food. He's not into strenuous activity but loves being outdoors, while also demanding he sleeps in a little cushy bed.

For all those reasons, when I go /out/, I go car camping. So that I can properly carry all his bed stuff and food.

So the guy trained one poodle to hunt and accepted that small datapoint as a judgement for an entire breed? I had mine hunting pheasant with no problems at around a year and she's a joy with the kids. What gives?

How many poodles have won NFC? Better yet, NAFC? Are any poodles FC or AFC? No. They aren't even allowed to run. Because they haven't shown themselves to be contenders. And they are slow. Poodles swim S L O W. Field trials already take too much time.
UKC will let poodles run. But UKC isn't really a breed standard club, it's more of an off season gun dog club.

This guy trained and handled the first poodle to HRCH. Took over 10 years for a poodle to earn the title. The dog was 6 years old by the time it earned the required 100 intermediate level points. Evidently he's done it again with other poodles, but he's the only one, and that's as far as anyone has been able to take a poodle. Meanwhile, Labs are running identical tests, earning 30 points in weekend, and earning HRCH at 18 months.
I'm sure you and the kids love to play tennis ball on the beach with pup, and it may even flush a preserve pheasant or three, but OP won't have to quit his day job to train a lab to push 3lb Iowa roosters back at the guns, to carry a crippled snow goose across 1/4 mile of stubble or jump out of a boat into 40 degree water for a canvasback it didn't see fall.
I've yet to see, in person or video, a poodle even come close to the style, personality, or trainability of a lab.

If you want an retriever dog, get a labrador, a golden, a berna retriever o maybe a newfoundland.

If you want a dog that will trade his life for yours and your family, get a german shepherd (the type that the police uses, I mean those with healthy hips), giant schnauzer, a belgium shepherd. Those dogs are work dogs and I am sure that they can be trained as a retriever. The schnauzer more than the others.

If you want a small dog that cuddles with you in your bed, get a yorkie, a puddle or a maltese dog. But if you want an active one, get an jack russell or a pincher toy. Those are good guardians too, they function as an alarm.

If you want something that is somehow in the middle, I mean a medium dog, wich can retrieve, is good with kids, it may be a good as guardian/alarm and also is a work dog, get a border collie.

It's really a mixed bag if you get one. Hypoallergenic dogs and cats are actually a meme. Poodles produce the same allergy causing protien at roughly the same rate as every other dog. Literally the only difference is they shed less, and because of how curly their coat is, much of the shed hair is trapped in their curly coat. This makes it easier for people with allergies because there isn't hair flying all around the house. So less shedding + less shedding = hypoallergenic, but they don't actually produce less allergens. However, either or both of these traits are usually taken away when bred to a flat coated, shedding dog. Hypoallergenic is just a buzz word.

Intelligence isn't always a good thing. Being intelligent won't mean a dog is naturally good with kids or will be easy to train. In fact very intelligent dogs are often hard to train. That being said, besides being high energy I don't see how poodles could be awful with older kids. I wouldn't suggest any dog for young kids though because people then assume you can leave young kids and dogs alone kek

They are high energy dogs, so it would be best to carefully watch the dog when it is around kids, especially younger ones. Dogs can hurt kids accidentally just through playing. Whatever dog you do end up choosing, even if it's a small dog, never ever leave the dog and the child alone. Also teach the kid how to interact with dogs, like how to pet it and how to give it treats.
