Going /out/ in North Korea would definitely land you in prison or in front of the wall. They don't allow foreigners anywhere out of the "tourist" zones and even the people in North Korea are restricted in where they can go. Travel is highly regulated there.

There are annual "harvests" but they keep digging tons of it every year with no end in sight in some places. Accidents are fairly rare tho, because people don't go there, and when a farmer digs one while plowing a field it sometimes explodes but the guy is rarely harmed

And the amount of shells is just beyond imagination, more than 60 millions fired just for the battle of Verdun, and many more with the other major battles like the Somme or the Chemin des Dames
Belgium and Germany have the same issues in some places

Nowhere else are tourists prohibited from leaving out of sight of their designated guides (and you can't just go to North Korea on your own)
Perhaps the wealthier residents of Pyongyang have the ability to go camping (presumably not just in a random part of the wild) but I have a hard time believing the rural population has that option, and not just because of poverty.

Reports from people that fled the country state that one needs permission to travel from one's designated area and a certain reason has to be stated. For people outside Pyongyang, travel is mostly prohibited. You cannot compare the situation North Koreans live in to any other country. You have the freedom to leave your home and go to the other side of the country, you can leave the country if you want, you can go on a hike outside - they most certainly do not have the same options.
Literally just type "north korea freedom of movement" into Google and you'll get many results.

Also I'm going to be honest, I don't trust US propaganda about the living conditions of North Koreans. I know it's probably not great over there, but you can look at Pyongyang on Google Maps for yourself- I can think of plenty of worse places to live. Also, do you really think North Korea has the ability to enforce any restrictions on freedom of movement in the middle of nowhere? I seriously doubt it. Not that Bong Kim Farmer has any interest in going camping (what asian does?), but even South Koreans were allowed across the border to visit scenic regions until like 2010 (when the SK govt ended the practice cause they were butthurt). You're deluded if you think a Nork can't go for a hike around his village.

Most defectors with horror stories are probably political dissidents who were treated as such and now whine about muh human rights so that they can get tv interviews and book deals.
