I guess the main things you can do are hobo pies and "___ on a stick" type stuff. So, you'd need to get some pie irons and sharpened sticks. Lots of people like wrapping dough in a spiral around a stick and baking it over the fire. You have to be patient or you'll burn them. The dough can be anything from brownies, to biscuits, to cookies, to normal bread dough. Just keep rotating it. Stuff for pie irons can be just about anything. You either make something specific to put into them, like pancake batter, or slap in some buttered bread and leftovers for hobo pies, or go all out and make actual pies. The latter is time consuming.
Roasted/baked vegetables are pretty good too.
