This is just so wrong. In a canoe you sit high up in a seat. In a kayak you sit at or below the water line. By their very design the kayak is less top heavy. Now I'll give you that if you compare a very wide canoe with a very narrow beamed kayak that the canoe might be more stable. However, typical canoe vs typical kayak, the kayak is way more stable.
I can easily take everything I need in my kayak plus a little and I have spots for water bottles in between my legs and bought a dry bag hip belt thing that sort of looks like a fanny pack for my camera, keys, wallet, sunscreen, etc.... All of those things should be in dry bags regardless so they aren't any easier to get to in a canoe and I already acknowledged that regarding simple hauling capacity a canoe wins. How much stuff do you bring? You sound like a car camper.

I used to have an old town 14'6" canoe. It was real top of the line and I loved it. The best thing about it was being able to take someone with me. If you want to argue how awesome canoes are that's your best footing, you can take someone.
