If several days, i started drying my own food for hiking, and eventually converted to the same for the light mountaineering i do. Less than 3000 meters. This is done with small packs of cheese and other relative heavy delis with completely dried bread (not as much for weight, as durability. Dried bread is hard)
For hiking, up to the two weeks maximum i did, i also bring wheat and freeze dried yeast, to make delicious bread every day, along with several, carefully planned toppings. Again, heavy, but worth the damn thing. Freeze dried gets boring quite quickly.
