Blue mountains are pretty good for mountain biking, I think some areas don't allow you to have a fire, probably need to do some more research. A good quick ride is the Oak's fire trail, it's not too technical, and decent fun. If you can truly be fucked, head to down to Canberra, they've actually got some pretty good mtb, especially Mt Stromlo.

Biggest threat is hypothermia I'd say. The weather kills a fair few unprepared folk in nz. I guess the equivalent here is crossing the outback with not enough water and getting fucked up by the heat, but people are generally prepared because it's not memed as a safe place.

Try out moggill state forest some time. It's mainly fire tracks, but some pretty good views for a low tier anstead mum track. Nice and quiet.

Like you can't just go for a 2 day hike in Australia, getting anywhere worth going to is a days drive, so usually even 4 day weekends aren't enough

We do have heaps of beautiful /out/doors, but it's not really realistic to see most of them until you've retired

also in the south victorian Otways, we've got a carnivorous snail to watch out for, in case you thought Australia wasn't a big enough meme already
