My general meal plan is usually:
breakfast 450 cal: 3 instant oatmeal packets, 1 hot chocolate packet and coffee
day food ~1500cal: this is where I get my variety and my energy to walk or bike during the day, it usually consists of energy bars, pop-tarts, candy, cookies, donuts, cheese, etc
dinner 1200-1400cal: noodles or pasta (ramen, sidekicks, kd) with tuna packet in oil, more hot chocolate
nuts 600cal: i usually eat about a quarter pound of nuts before and after dinner.
This weighs pretty close to 2lbs a day (a bit less if you pack calorie dense snacks). Everything is dehydrated, prepackaged and easy to find even at gas stations.
