>>1147528I love to make a trail version of Egyptian Koshari and Lebanese Kabsi, which come down to a mix of rice, macaroni, chickpeas, beans and lentils with some brown onions and sauce. You can also add nuts and other vegetables to go more in the Kabsi direction.
Very rich in nutrients and tastes like heaven. Chickpeas and beans of course should be canned or pre-made versions, as you'll have trouble soaking and cooking them when outside. Traditionally these are made in various pots, so you'd have a lot of dishes to work and clean. You can however stack them as well, that is prepare them all in one or two pots and simply add the next ingredient.
I'd generally start with the rice and some oil in the pan, fry it for a bit so it has a slight roast. Then fill up with vegetable broth and let it cook, adding the noodles at the right time. Let the water cook out on low heat and when both rice and noodles are almost done, add the canned chickpeas and beans. Finally, add sauce and the fried onions and vegetables.
I couldn't notice a significant difference between this simple and the traditional version, so I can't be bothered to cook it with multiple pots even when at home, lol. Best thing is this recipe can be varied greatly, costs almost nothing, tastes great and has superb nutritious values.
