If I were to wander off into the wilderness with limited supply’s in an attempt to survive off the land, is it legal/excusable to hunt/fish out of season without a lisence? If not in America, where Can I do this?

If you are thinking of doing this that means society has failed you so you have no obligation to follow their rules. You will fail of course but whatever you do will not affect animal populations so go for it.
