The bright red light is still relatively dim and won't ruin your night vision.
I'm not sure how much that Black Diamond costs but Lowe's actually has some really good flashlights for decent prices. Coleman, btw, makes some decent headlamps too.
As for flashlights, Kobalt brand has done me well and I don't see paying 2 to 3 times what I should just because it says 5.11 or Surefire on the side.
There's nothing wrong with having a bright tac torch in your pack and as a back up light but generally, you should use as little light as possible.
I really recommend going to a local specialty shop for your backpack and trying them on with the weights in them. You may be able to save money ordering off Amazon for most things and asking here but getting a pack that fits proper and good boots that fit proper (and that you've broken in before your first big hike) are two things you want to make sure you do even if it costs you extra. Get a sleeping bag that is warm enough but look at compressed size as some of the nicer warm ones have fuck huge compression size.
For a knife get a Mora or a "bushcraft" knife similar to what's pictured here, (protip, there's about a billion different kinds, shoot for something classy with a 4" blade.) If those are legal in your country, otherwise get a Swiss Army knife that is.
