Anionized aluminum is safe from my understanding, normal aluminum is NOT safe and creates aluminum salts that will degenerate soft tissue, including in your brain. Stainless steel will leach chromium and nickel when scratched by utensils and this is HIGHLY toxic. Once exposed to air, the metals are sealed into the alloy, but use another utensil and scratch it and you're again exposing yourself to small amounts of toxic metals.

high-tech ceramic (some leach lead), porcelain enamel coated cast iron, glass, terracotta clay (the nonimported type without lead), and of course cast iron are the best. anionzied aluminum is alright as far as I know, I just don't feel like risking it because I cook roughly. Titanium is sometimes a meme and not actually titanium, but coated in non-stick chemicals and built on an aluminum base. You just have to look into the brand/
