As far as the decision process goes, I'd suggest setting up 10 different strawpolls devoted to each detail (starting point, destination, date, trip duration, etc.) and try combining the results into a solid plan. If there are many voters and contradictionary votes, it could be split up into several different trips to accomodate everyone, but then again, I say we start with the basics).
The only real trouble is overall coordination, because personally I have no fucking clue how set up a discord or anything like that and I don't even have a facebook. I'd be glad to help if someone would decide to step up and actually set up a communication grid of some kind.
So let me know if you're interested (and if you are, provide basic info, where are you from, when do you have the time, what do you want do etc.), and I'll come up with a basic rundown of possibilities. That Góry Sowie thing was just a random proposal, there are tons of places to go, depending on what you want to do.
