How much does it generally cost to process a whole deer? Do people prefer any particular cut of meat? Do you guys keep in touch with leatherworkers who can send stuff straight to be made into finished goods (jackets and shit), or just referrals? How big of an area do you get business from? Being carefull to wash any traces of hair off the meat, and not rupturing the bladder are a good start.
I mix my ground 3/1 deer/regular ground beef, improves the flavor and makes a juicier burger. And with steaks/roasts i soak them in warm salt water (2tblsp/liter) left in the fridge overnight. Seems to help especially if they have been feeding in spruce.
