Make sure nothing is rubbing against the camera. Make sure your clothes aren't too loud. Watch the heavy breathing.
Crunching gravel and sticks is fine though. Louder the better.
Keep the camera steady as possible. The hike will be for other people, not you, so maybe keep the camera at head level even if it's a bit uncomfortable.
Pause now and again, and swoop around. If you hear birds, record it for a bit. Same with running water. Or any animals. Or interesting land marks.
For fun, you can do holiday themed videos. Like pretend you're being chased or scared on halloween. Or have a picnic.
