As for rice, I cook lots of grains like this including wheat and barley (Which can be eaten just like rice). In my experience, the white rice (The least healthy kind) cooks the fastest and brown rice cooks the slowest.
If you want an extremely fast alternative to this, consider couscous. It takes literally no time to cook. In fact, you can just boil the water once and let it sit and it will cook in minutes.
