The biggest things you're gonna want to teach an /out/ dog is an amazing recall (if it doesn't have a good recall or has high prey drive don't let it off leash), a command to not bark, and to hell on a leash (this helps keep the pup near you on hiking). Don't forget the basic sit, stay, lay, drop, etc, those are just important in general.
