knife
some way to start a fire
sleeping mat + blanket or sleeping bag (unless using a trailer)
clothes (when trekking, bring extra underwear and socks)
food (at least iron rations)
water (at least 2 litres, more for tropics or desert or if you don't want to search for water in camp)
But these are only the pure basics. If you're in an area with wild animals, bring some kind of weapon (OCspray or gun).
If you're not allowed to make a fire or can't find wood (desert, mountains) bring a stove (alcohol or gas for moderate climate, gasoline for arctic and alpine).
If you're not used to sleeping in the open, bring a tent.

Basic things to know:
treating cuts and abrasions (happens sooner or later)
emergency signals (SOS, alpine signal, communication with aircrafts)
starting and containing a fire (unless using a stove)
finding a dry and safe camping spot (no dry branches or loose rocks above, higher than surrounding terrain, not at the edge of a cliff).
finding a way back (for germany it's simple: find a waterflow, follow it's direction - sooner or later you'll find a road or settlement)
