For fires, I'm not particular at all so long as the wood it dry.
For wood working though, that is another matter entirely. I really like how well sycamore wood carves when wet and love the fact that it like never ever splits. Plum wood on the other hand, holy fuck, it is tough as nails to carve when wet and horrific to carve when dry and it nearly splits into pieces as it dries and checks badly. American hornbeam wood is really REALLY nice for making tool handles and other applications where you need some thing very tough. Pine....I hate working with pine. It's okay for framing and small non-consequential projects that don't require carving details.
