My favs that are about 1 hour from Nashville or less:
Virgin Falls: easy to get to the falls, tough to get back out! Worth every mile
Cedars of Lebanon: Nice ~5 mile loop, easy but a few cool unique sights
Bearwaller Gap: if you start at the eastern trailhead there's a fuken nice view at the end of the trail (hard on the way back tho)
Bledsoe Creek park - easy overall but nice trail (local to me personally so biased)
Bryant something at long hunter state park is nice and easy but with some nice views of percy priest lake - mostly a good running trail. For hiking with views of same lake try the volunteer trail although it's sort of trashy

No I never went in the cave just up to the entrance. I've played disc golf there a few times and it's nice too but I personally prefer more open courses because I'm not that great at the technical ones. I don't live in Gallatin but just one town over from it.

I don't do either but there's lots of camping available and many parks I'm in I've noticed sections where they tell you to be careful because you're in hunting lands.

As far as what you hunt I can only assume it's mostly deer because that's mostly what lives here

Depends what part. East Tennessee has the Smokies, tons of trails, waterfalls, and whitewater. Also more snow generally.
Middle TN has rolling hills, lots of farmland, but still some good hiking and plenty of parks. Lots of lakes, rivers.
West TN is like Middle, but flatter.
Hunting and fishing is good throughout the state, and very popular.
In terms of outdoor potential, the cities:
Chattanooga>Knoxville>Nashville>Memphis
