Why, both, of course. You'll be carrying a sleeping bag, a tent or hammock, and insulation. Why not get them in the lightest version you can that will still fit the bill for you? Same with other equipment. That's what i do, and it serves me well, it'll serve you well too. Do i still carry a mossy 500 every time? Yes. But cutting down on weight where you can is beneficial, and some ultralight equipment is sturdy and well made enough that it stands up to heavier shit no problem.

The lighter the better. Get familiar with using a tarp and the different ways you can structure it so you can use it instead of a tent. You'll likely be carrying one anyway to cover your fire from wind/rain.

Bushcraft. You can only be a real utlralighter if you can make the stuff you use from the stuff you find /out/. This way the only thing you carry is a knife. You can craft your pack frame, cordage, fabric, containers etc. Actually you can get by without a knife but you said you are new so for introductory level...

Just be a normal outdoorsman and do whatever you want. Bushcraft skills have their place and ultralight gear does too. No need to stay on one side of the fence the entire time.
Pic kinda related. Just find some spot roughly in the middle and go from there based on your preferences.

I prefer a min maxing approach, putting my perk points in both and other ancillary things, E.G. I wear light clothing, tarp and wool blanket over tent and sleeping bag + mat, saves me space in my medium sized rucksack for my baby machete and copious cooking apparatus, and I save on points that I can put in to magicka and herblore.

Stop youre thinking too far ahead. Get a comfy daypack and some merrils and go hike all your nearest trails to completion. At least anything from 5mi to 10mi. Bring water and some nuts and shit. Maybe maybe some rain protection but you should know the weather. After you've done that a bunch youll know what comes next
