Take them hiking as soon as they can hike.
But if you live in the first world, there's a 99.9% chance that you'll never be in a "real" wilderness survival situation. It's just not gonna happen unless you actively attempt to put yourself in one. Just don't do dumb shit like backcountry skiing or bush piloting without taking an emergency beacon.
That said, the wide umbrella of survival skills covers some useful stuff that any kid should know. Cooking and emergency medical basics are good even if you never go hiking. Hunting, trapping, firestarting, foraging, and shelter building, not so much.
