get a low mileage used van with a good reputation, like maybe a Chrysler town and country. one with sto-n-go seats so you can fold down all the back seats and have a shitload of room for gear storage and can fully lay down and sleep in the back.
this way you can sleep in you van at rest stops or Walmart parking lots, whatever. this will save you a ton of money on camp sites and hotels and also keep you safe.
put a small 12v fridge/cooler in the back so you can buy and store at least small amounts of some perishable food items like meat, cheese, w/e.
there are lots of ways to eat inexpensively on the road, but you need to be able to buy the right foods and haul them along with you in between stops
bottom line, learn to camp for free, sleep in your vehicle at safe places. don't eat out at restaurants. buy your food at good prices in a regular grocery store
