I'd definitely set cameras up at places where the trash piles are appearing, and try to get a license plate on camera. If he got them carrying a deer to their truck on camera, the sheriff/game warder/whoever could demand to see the tag for it, and if they're unable to produce one they'd be busted.
There are actually a LOT of things I'm willing to put up with outdoors. If you need to shit in the woods, fine, find a spot where people wont step in it. If you make a campfire, I don't expect you to bury all of the ashes so that I can pretend no one had ever been there before.
But god DAMN I cant stand poachers. Literally worse than REI-hipsters, worse than glampers, worse than college kids. At least you don't have to worry about any of those trying to shoot you for catching them in their bullshit.
Fuck poachers.
