Yeah, no.
They're way to heavy and they'll spoil after a few days if left unrefridgerated.
But I gotta give you that, for some 1-3 day thing you might be onto something, especially in situations where you have to carry all your water all day anyways so that water-already-in-your-food vs. water-needed-to-rehydrate it comes out the same.
Gotta give it a try for the next weekend outing maybe.
But this

I don't see a problem with that. Just make it yourself on the trail. Fresh gnocchi is better than store bought every time, once you learn how to make it properly.
