well basically everything /out/doors except hunting. So, cutting plants, wood, trees, rope, things like that.

You don't know how glad I am to hear this.
But.
I think I found out why it is so much cheaper, apparently it rusts really easily. Now I don't have much bushcraft experience, is this a thing to worry about? Or just washing and drying it prevents it from rusting?

well depends on which version you get, carbon steel or stainless. Carbon steel will obviously rust, but I prefer it for how sharp I can get it and the ease of sharpening.

If you let it develop a patina, and later oil it every now and then (I just use mineral oil, so it's always food safe), you won't have any problems with rust. Worst case scenario, some rust develops, and you use some steel wool to get it off.

Google "knife patina" to find out methods of hastening the oxidation process, I used mustard and onion myself.

It comes in Sandvik 12C27 steel the same as the other two knives. So it will be exactly the same for rust.

There is a carbon steel version roughly the same price which will be more subject to rusting but whether to choose that is a personal thing because carbon steel has it's advantages as well as disadvantages.

There is a pretty decent list. My all time fav is the BK2, extremely well made knife, that has gotten the nick name "Pry bar with an edge" I would take that large beast of a blade, team it up with a smaller, thinner blade.

I actually got my first knife after browsing through that other knife thread.
I decided to go with the Opinel no. 8 because I really only wanted a way to eat avocado on the go.

Derp, I should've read on.

Some general info:

There are stainless steel blades and carbon steel blades. Stainless steel resists corrosion but won't hold an edge as well, carbon will hold an edge but will corrode if not properly maintained (keep it clean and dry).

Serrations are meh.

Related, do you think the Opinel can handle removing the avocado pit? The method where you lodge the knife in the pit and twist it out, could this damage the blade?

It can handle it, my wife eats about 2-3 Avocado's a day, she uses the blade to pop the pit out. The only damage I have seen so far is a lil dulling on the blade, a lil bigger waist line on my wife.

You can't go wrong with a Mora, for 15 bucks you get a knife that will last for a good ten years If you take care of it. If you want a big knife, the Cold Steel Kukri is a good choice. Gerber went to Shit when the moved there OP to China. IMHO
