It doesn't prevent me from doing it all the time though. Off trails at night there are fuck all people. We don't really have park rangers patrolling the place either, unless you really are in the core of a sensitive national park.
It is feasible with precautions. France has a relatively low population density especially when compared to its neighbours but we never are really far from a village. Be careful with fires and the attraction they cause. Make sure you aren't on someone's workplace (cultivated forest, cattle grazing land). Wake up and pack early, be aware of hunters seasons, etc
Ardèche is very rural and has a nice topography, it's easy to hide
>>1285253The Montagne Noire is good, here's a pic I took there a year ago in the morning. I recommend the north side for an over nighter, it's the most forested and high part.
I've never actually hiked in the Quercy but I've passed through the area more than once. Seems pretty comfy especially if you enjoy a bit of old towns and castles throughout your hikes. If you really want to get away it looks rural enough but not really mountainous so harder to hide
Not far from the Montagne Noire I recommend the Caroux-Espinouse. Absolutely love it here, from dry rocky Mediterranean mountains to lush river gorges and forest and moorland plateaux, it's gorgeous
