Get a 2nd/3rd battery (either a 12v deep-cycle or two, or two 6v golf cart batteries in series) and a battery isolator, run off that. Put an ammeter/voltmeter on that battery to monitor charge.
Then get yourself a 12v laptop charger. They're inexpensive, and much more efficient than running a gen with the associated losses in multiple AC-DC conversions.
While I love my generators, if all you're running is a laptop (and maybe some other devices), most cases there's no need for one of those if you've got a vehicle.
For an off-grid cabin, chances are you'll want to run more than a laptop... if not now, maybe you'll add stuff later. To be honest, for a laptop at a cabin, your best bet might actually be a few solar panels keeping a battery array charged. And I don't care much for solar, but a situation like that it has value.
