Actually my whole elementary school was an underground building covered in dirt. They eventually undug it and put a roof on it instead. (ahhhh playing on the grass roof with the billions of fire ants...)
The big issue is the water creep. If you live in a wet area. Your undergrown roof NEEDS to be steeper than you think. And be above the water table considerably.
IDK maybe some thick polytarp of some sort on top with all the edges sealed with a tarp or liquid adhesive.
Remember to keep the roof from growing trees/anything with deep roots.
