I have a hammy down food dehydrator I got from my aunt this week.
I am going to dry all the food I need for my summers /out/ activities.
Boneless Chuck steaks are on sale for 2.99 per pound. Will this make good jerky?

Also please share any and all tips for this unit.

Proper Jerky is not done in a dehydrator, it is done in a smoker.

Also, for long trips I'll make up spaghetti with a tomato/ground beef sauce and dehydrate it. Brown the meat separately from everything else and pour off that fat prior to mixing it with the noodles.
I also dehydrate a mixture of ground beef, rice, vegetables, salt, pepper and cayenne to taste. Makes for a filling and easy meal after a day of hiking.

This is true if you need it to keep for weeks.
Fatty jerky tastes soooooo much better but last only a week without refrigeration.
I make mine fatty and keep it in the freezer until I go camping.
It melts in your mouth.

Too much fat on a chuck Imo.
I get the shittiest leanest sizzle steaks, or the shin meat off a deer. I make jerky with my teepee smoker though, just a candle and a can of wood shavings does the job.

most meat is fine. just be aware that fat will spoil quicker so lean meat is better. also fat will sweat kinda like cheese in the sun.

protip, freeze the meat for a short time until its somewhat hard but not frozen solid. this makes it very easy to cut into thin and even pieces.

You are correct that it has a much much shorter shelf life ... but the flavor!
Do you agree that it is superior in taste? I suppose I might be the odd man out as I love fatty beef above all else.

I honestly don't know, it's how my dad did it. Just a small candle under a tripod burning the bottom of the can, makes the wood shavings smoke. I'll have too look into it.

Is it a good idea to make jerky with smoker and dehydrator?
I only have acess to mesquite good, and it leaves such strong smoke flavor after 12 hours smoking the meat. So i was thinking to smoke the meat like 4-5 hours and then put it in a dehydrator

i agree with>>1313623 candle smoke is no good, many cheap candles are inpure and use petroleum products like paraffin. they also burn very incomplete and produce a lot of soots. better to use normal smoker methods

just wine its will grow yeast while below ~12% but once above it will stop.

so the conclusion that if pemmican might last, so will the lower fat of jerky will too is wrong. also, pemmican is traditionally stored sealed. because otherwise its hard to avoid the same problem of Rancidity, that is the complete or incomplete oxidation or hydrolysis of fats and oils when exposed to air, light, moisture or by bacterial action, resulting in unpleasant taste and odour.
