Any of you guys practice taxidermy?

I'm looking to get into it. I have a few questions. I want to tan the skin using the brains of the animal, but am wondering if this is dangerous due to the possible contracted risks.

Should I buy a pig or cow brain instead? Any tips on fleshing?
