Spain's laws are a good example. Their anti-wild camping laws are to stop people setting up week long car camps during holiday season. However, if you are a hiker, at altitude in a small 1-2 person tent then you can camp legally.

The closer you get to built up areas the higher the chance of having trouble. But when I've been on hitch hiking trips or a trail takes me through a built up area I have slept next to roads, in parks, on beaches, etc and never had an issue. Pic related. Trail ended in a high-end, popular tourist town. Super busy. Still slept on the beach. Woke up with the sunrise and washed in the water as the resort dwellers appeared.
