I would just avoid doing what all the retards that go on that show do.

Wear camo or at least muted colours instead of dayglow yellow backpacks.
Travel light, just water food and a bivvybag and a change of socks.
Get off the road straight away and take some time to make sure i have left no tracks.
Dont sleep in any convenient shelter.
Make sure my smell wont spook the horses.

I've only seen that show twice, but it seems like the reason people get caught is because they're way out-of-shape. If you just discarded everything but water and started running on horse-unfriendly surfaces, you'd probably be fine.

I've only seen it a few times too. I imaging it's mostly staged. Both the hunter and hunted both have camera crews at different points during the chase so it can't be too hard to find someone with a 3-4 person camera crew when you know generally what area they are in.
