Canoes have an advantage in weight capacity per length, and are the better choice if you're hauling an absolute fuckload of shit. But there's absolutely no reason you can't load up a low-end kayak with normie car-camping gear and do just fine for extended periods of time.
Kayaks will also be ~40% lighter at any given length and price point.
