As for your questions there are some places where you camp that are relatively far away from the nearest village/road and have pretty views, but even in Gerês or Estrela is impossible to hike all day and do not come across any remarks of civilization. That being said you'll not find many people since it's mostly old people living there and the rest rarely care for trails outside of well known and selfie like spots. http://manteigastrilhosverdes.com/portfolio_page/carvao/In the Gerês you have the GR34 that I haven't done myself but seems nice, plus you have the GR da serra do soajo e da peneda, it's a beautiful location and if you get lucky you can see wolves, I did it recently but no luck tho.
As for Spain, well I can't really say anything about the Pyrenees because I haven't been there, but having hiked a fair bit in Galiza, Léon and Asturias I can say they suffer from the same problem as us, way too many villages along the trail, they have a far better managed and native flora still, at least you don't see eucalyptus all day long.
