Storage area wouldnt be a problem as you can simply dig a underground storage area including shelves for other vegetables or self-canned foods and plenty of room for potatoes to lay in a cool area.
Takes a day to dig a hole like that and another to get it storage ready.
Also I dont know where you get the idea that I´d live off potatoes alone, as I have mentioned pumpkin, berries and fish as well, but obviously there´s more vegetables to grow which don´t cost anything and are low maintenance.
Its also a good idea to build a chicken coop. When you live in the wild there´s plenty of resources to build one for free and make it virtually immune to predators, and the average laying henn costs only about 2,50 dollars, which they´ll pay you back in fresh eggs within 2 weeks, and when they get too old to lay you simply slaughter and eat them.
Obviously you can hatch more chicken if you get a rooster as well, could even try to sell henns to people if you have enough, and raise and eat the roosters as you only need one.
