When I clean deer, I lay them on their backs. I use the spey blade of a trapper pocket knife to open the skin from crotch to sternum. I tie off the urethra and colon with a small piece of shoestring. I then cut around the pecker and anus. Then I reach around the heart and lungs and loosen them. Then I roll the deer on its side and everything pretty much rolls out.
I learned this long before I ever shot a deer as we raised goats when I was a kid and a deer is just a big goat.
