are you establishing a burr on the edge down the entire length of the blade before switching sides of the blade?
im no expert but the basics i use are: grind on side A of the blade until you get a burr going on side B, then flip over and grind side B until you have a burr on side A, then flip over and grind a very gentle pass or two on side A, just enough to remove the burr without putting a burr back on side B. Now move up to the next grit and repeat.

Have that setup at home. Basically same shit as the original 200bux one, except for the stones. The chinese stones are great for chinese knives, but shitty for good steel. Buy that setup for 20$ and then spend another 50$ for good stones, it really makes a difference. Besides that, the setup itself is perfect

Please elaborate because I can take your post one of 3 ways:
1. You got too fucking old and lost dexterity to the point where you can't sharpen with a stone by hand. (Are you old?)
2. You've had a knife since childhood that you've been sharpening, and that same knife won't sharpen anymore?
3. All modern knives you buy new now don't sharpen in comparison to the knives you had bought when you were a kid.

Sounds like you are not establishing a burr, so you are not actually thinning the apex. Does not matter how many grits you use if you are not actually touching the edge. Even a low grit edge should be sharp enough where as you could easily be cut by (sliding not pushing that is) it before moving on to the next grit.

The problem with common sharpening stones that are "coarse/fine" is that they claim bogus grit #'s and are more like very coarse and very very coarse.

Get quality stones op. A true 1000 grit should blow your mind how smooth it is. Going 1500 or 2000 is just autism and waste of time.

its because youre bad at sharpening. you dont strop, you dont use specific grits or have names for them other than what it says on the box at walmart. by the way, some knives wont take your bullshit arkansas stones or most natural stones that take forever. get diamond or, in some cases, ceramic. youll waste less time and you wont get cucked out of an edge because your steal is too hard
when you need to fully sharpen a knife, you have to make the edge, not hone it or microbevel it like what youve probably been doing forever and ever. look into that
if you ever buy one of those horse shit knife sharpening setups where everything is done for you, youre going to be looked at as a laughingstock
