SAS Survival Handbook has a good bit of "emergency survival situation" stuff, and a section on Camp Craft. You might consider going to an actual book store and checking some things out physically, browsing through to see if a given book has the specific types of information you're looking for.
Ray Mears wrote one I really love called The Outdoor Survival Handbook that walks you through the seasons, including the changes in animal behaviors and such. It's got a lot of "bushcrafty" content as well, but, I don't know, it's just a really good /out/ book altogether, IMO.
