What I bring camping depends if I'm car camping or not. However, some canned staples I stand by are vegetarian chili, lentil soup, split pea soup (although many types have bacon), pinto beans, refried beans (though some contain lard), and garbanzo beans.
Almonds, peanut butter and jelly, and other nuts are also great.
Quinoa, rice, cous cous (which is easier to prepare than rice or quinoa at higher altitudes), and whole grains will supply you with tons of carbs and a decent amount of protein.
Obviously any fruits and veggies are great, but I find dried fruit (especially raisins and dried apricots) particularly convenient for camping/hiking. That said, they're bound to make you shit, so get ready.
Lastly, NUTRITIONAL YEAST. Tons of protein and easy to add to soups, stews, etc.
