3110 calories across two days if OK if those days are mostly sedentary, and/or you can afford a few days afterwards to level off.
Otherwise, it's too little and the nutritional balance looks off. Add in some mixed nuts/dried fruits, and drink powders (isotonic), and you'll have something more rounded.
Even a few small packs of sweets or a fruit bar will provide some welcome novelty.
But yeah, if it's a one-off two day need to feed yourself, should be fine.
