I bought a pelican Mustang 100x kayak from Dicks Sporting goods. I got an awesome deal on it as it was a return (A lot of people buy them, use them for a day or two and return them apparently). The fuckwit kept the waterproof hardshell case it came with, and broke a foot peg (free under warranty). It was around 350, and I paid around 220 i think. This kayak had pretty much everything I wanted, I'm a heavy guy so it has a 300 pound weight limit, fishing pole mounts, water bottle holder (just a dent in the crotch of the seat), rear storage tiedowns, and a front (almost water resistant) cover.
I looked into foldable / inflatable, and I didn't want to do that. Especially if I ground it out or hit a rock, fishing hook, etc. and get a hole in it. The solid ones are going to be easier to patch, and i'd say more durable.
I have an SUV so I bought roof racks (was going to get them anyway), my OEM KIA bars ran about 30 bucks, you can get cheap (non folding) rack mounts for cheap, or a car kit that ties you to the trunk / hood and rests safely on the roof.
Other than that, I bought a life vest (legally needed on non private lakes), a paddle, rigged a bev holder, and figured out a spot to mount a bluetooth speaker for my Eagles, and Little River Band, etc. and your /out/!
