Electronics are antithetical to survivalism.
Best to print off manuals, with the tiniest font, laminate, and bring a magnifying glass.
Water proof, don't need power, durable, etc.

I'd keep copies of highly detailed medical texts detailing trauma repair and basic surgical procedures like properly removing a limb and tracheotomy basic chemistry
no stupid "how to survive if you're too dumb to survive" books but large volumes of useful data you can't possibly remember all of at once

Yeah it's called android tablet / iPad with hand crank usb generator. You need at least a 7" screen to read the pdf. If you don't need to read pdf but ebooks are sufficient, you can use a kobo + gps dongle (the paragliding community is using this kind of stuff)

No, because it's dumb and there's already viable products that fill that niche.
Just get a small tablet/large smartphone and an external power bank that you charge at home before going /out/.
Crank chargers take a long time to charge up a screened device, like several hours of cranking just to get 30 minutes of usable power.
