As for the wild edible plants, as has been mentioned many times, find a copy of Stalking The Wild Asparagus.
Spices- I only listed cayanne because I'll eat anything with it, but it is good to bring pepper and salt and all of the rest that you enjoy.
I also can concur that when hiking around, you will feel a strain on your body.

Hydration cannot be pushed enough.
At home you probably don't drink "enough" water, but when you are straining your body out on the rode and in the woods for long times- you can drink 5 liters of water in a day without thinking about it if your constantly moving.

I know how I can survive, but I am, if you haven't been paying attention, trying to get a grand concencus.
In organizing all of this information I, of course, will add my own knowledge. I did not wish to seem grandious by at first acting like I know everything- I wanted to show respect to learn about all aspects (not all of which I asked, and some of which I re-asked for those left unanswered) from those who wished to provide it.
This is a common social practice, and one of the ways I survive out in the world on my own when being homeless.
You'd be surprised how much playing dumb can help you learn even more.
