Summer sausage is usually a mixture of pork and other meat such as beef or venisonokay, yea, thought it looked like pork sausage, just looked kinda "fatty" for something you would bring hiking, looked like something that wouldnt keep well, just not dry enough you know.
i would probably go with a beef salami or perhaps chorizo, because it has so much oil that carrying axtra oil would be pointless.
and Emmental, not a big fan of cream personally but combines with the cheese it will become more of a sauce
